Instructions

  1. Preheat oven to 375°F (190°C). Cook noodles per package to al dente. Drain, rinse, and lay flat.
  2. Heat oil in skillet. Sauté onion 3-4 min. Add garlic, cook 1 min. Add mushrooms, cook 7-8 min until browned. Season with herbs, salt, pepper.
  3. Add spinach to skillet, stir until wilted (2-3 min). Remove from heat.
  4. In a bowl, mix dairy-free ricotta with nutritional yeast.
  5. In a 9×13′ dish, spread ½ cup sauce. Layer: noodles, ½ ricotta mix, ½ vegetable mix, some mozzarella. Repeat layers. Top with final noodles, remaining sauce, and mozzarella.
  6. Cover with foil, bake 30 min. Uncover, bake 10-15 min until bubbly. Rest 10 min before serving. Garnish with parsley.
