- 2 lbs boneless, skinless chicken thighs (or breasts)
- 1/2 cup plain whole milk yogurt
- 1/4 cup extra virgin olive oil
- 3 tbsp freshly squeezed lemon juice
- 6 cloves garlic, minced
- 2 tsp paprika
- 1 1/2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1/2 tsp ground cinnamon
- 1/2 tsp black pepper
- 1 1/4 tsp sea salt
Instructions
- In a large bowl, whisk yogurt, olive oil, lemon juice, minced garlic, and all spices to form a marinade.
- Add chicken to the marinade, coat thoroughly, cover, and refrigerate for at least 2 hours (preferably overnight).
- For the sauce: In a food processor, blend peeled garlic, salt, and lemon juice into a paste. With the motor running, slowly drizzle in oil until thick and creamy. Add ice water as needed. Refrigerate.
- Preheat oven to 425°F (or heat a skillet). Place marinated chicken on a baking sheet and bake for 20-25 minutes, flipping halfway, until cooked (or cook in a skillet for 5-7 mins per side).
- Let chicken rest for 5 minutes, then slice thinly against the grain.
- Assemble: Warm pitas, spread with garlic sauce, and fill with sliced chicken, lettuce, tomato, onion, pickles, and parsley.
