Ingredients

  • 1/2 cup plain whole milk yogurt

  • 6 cloves garlic, minced
  • 2 tsp paprika
  • 1 1/2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1/2 tsp ground cinnamon
  • 1/2 tsp black pepper
  • 1 1/4 tsp sea salt

Instructions

  1. In a large bowl, whisk yogurt, olive oil, lemon juice, minced garlic, and all spices to form a marinade.
  2. Add chicken to the marinade, coat thoroughly, cover, and refrigerate for at least 2 hours (preferably overnight).
  3. For the sauce: In a food processor, blend peeled garlic, salt, and lemon juice into a paste. With the motor running, slowly drizzle in oil until thick and creamy. Add ice water as needed. Refrigerate.
  4. Preheat oven to 425°F (or heat a skillet). Place marinated chicken on a baking sheet and bake for 20-25 minutes, flipping halfway, until cooked (or cook in a skillet for 5-7 mins per side).
  5. Let chicken rest for 5 minutes, then slice thinly against the grain.
  6. Assemble: Warm pitas, spread with garlic sauce, and fill with sliced chicken, lettuce, tomato, onion, pickles, and parsley.
