Instructions
- Preheat oven to 425°F.
- Toss cauliflower florets with olive oil and salt. Spread on a baking sheet and bake for 30 minutes, tossing once halfway.
- Whisk water and cornstarch in a small bowl. Set aside.
- In a saucepan, heat tamari, brown sugar, garlic, hoisin substitute, and rice vinegar over medium heat until sugar dissolves.
- Add the cornstarch mixture, bring to a boil, then simmer for 2-3 minutes until thickened.
- Remove cauliflower from oven, brush with half the sauce, and bake for 10 more minutes.
- Assemble bowls with grains, cauliflower, edamame, and cabbage. Drizzle with remaining sauce and top with green onion and optional toppings.
