Ingredients

  • 2 tablespoons olive oil, divided
  • 2 medium zucchini, sliced
  • Salt and black pepper, to taste
  • 1.5 cups cooked corn kernels (from about 3 ears of corn)
  • 1 lb skinless, boneless chicken breasts, sliced into strips
  • 1/2 teaspoon smoked paprika (or more to taste)
  • 1/2 teaspoon chili powder (or more to taste)
  • 1/4 teaspoon salt (or to taste)
  • 5 cloves garlic, minced
  • 2 tablespoons freshly squeezed lime juice
  • 4 tablespoons unsalted butter, divided
  • 1/2 cup fresh cilantro, chopped

Instructions

  1. Season chicken with paprika, chili powder, salt, and pepper. Sear in 1 tbsp oil until cooked. Set aside.
  2. In the same pan, sauté zucchini in remaining oil until tender. Add corn and cook until warm.
  3. Push veggies aside. Add 2 tbsp butter and garlic to center. Cook garlic until fragrant.
  4. Return chicken to pan. Add lime juice and remaining butter. Toss to combine and create a sauce.
  5. Remove from heat. Stir in cilantro. Season to taste and serve immediately.
