Instructions
- Prepare all vegetables: shred cabbage, grate carrots and optional papaya/mango. Chop cilantro, slice green onions and serrano peppers.
- In a large bowl, combine shredded chicken, prepared vegetables, and chopped peanuts.
- Make the dressing: In a food processor or blender, combine peanut butter, soy sauce, sesame oil, rice vinegar, sambal oelek, sugar, ginger, and garlic. Blend until smooth.
- With the motor running, slowly add water until the dressing reaches a pourable consistency.
- Pour most of the dressing over the salad ingredients and toss thoroughly to coat.
- Season the tossed salad with salt and fresh lime juice to taste. Add more dressing if desired.
- Chill for 20-30 minutes before serving for best flavor. Serve cold.
