Instructions

  1. Prepare the French Onion and Lentil Base: Heat oil, caramelize onions (45-60 min). Add garlic, thyme, bay leaf. Add tomato paste. Mix in lentils, vinegar, tamari. Add stock, season, boil, then simmer covered for 25-30 min until lentils are tender. Remove bay leaf. Transfer to baking dish.
  2. Prepare the Cauliflower Potato Mash: Boil cauliflower, potatoes, and garlic until tender (15-20 min). Drain. Add vegan butter, milk, nutritional yeast, salt, pepper. Mash until smooth.
  3. Assemble and Bake: Preheat oven to 375°F (190°C). Spread mash over lentil base. Drizzle with oil, garnish with thyme. Bake 25 min until top is browned. Broil 2-3 min optional for crispness. Rest 5 min before serving.
