Instructions

  1. Preheat oven to 350°F with racks near the center. Line two baking sheets with parchment paper.
  2. For the filling: Mix brown sugar, 1.5 tbsp flour, cinnamon, and salt. Work in 4 tbsp butter until mixture resembles wet sand.
  3. For the dough: Beat 1 cup butter and granulated sugar until light/fluffy. Add vanilla, egg, and yolk; mix.
  4. Whisk remaining flour, baking powder, cornstarch, and salt. Gradually mix into wet ingredients.
  5. Roll dough into a 9×13′ rectangle on parchment. Sprinkle filling evenly.
  6. Tightly roll into a log, wrap, and chill for at least 2 hours.
  7. Slice log into ¾’ rounds. Bake for 10-12 minutes until edges are just set.
  8. Cool on sheet for 5 mins, then transfer to a rack.
