Instructions

  1. Pour one can of chickpeas with its liquid into a blender and purée until smooth.
  2. Heat olive oil in a pot over medium heat. Add garlic and sauté for 1 minute until fragrant.
  3. Add the puréed chickpeas, the second can of drained chickpeas, diced potato, paprika, rosemary, thyme, chili flakes, and black pepper. Stir to combine.
  4. Add the vegetable broth and stir again.
  5. Cover the pot, turn heat to medium-high, and bring to a boil. Once boiling, reduce heat to medium-low and simmer for 25 minutes, stirring occasionally.
  6. Taste and adjust seasoning with salt and pepper as needed.
