Instructions

  1. Preheat oven to 425°F (220°C). Pat steak dry and rub with 1 tbsp olive oil, garlic powder, onion powder, salt, and pepper.
  2. Toss zucchini slices with remaining 1 tbsp olive oil, salt, and pepper. Arrange on one half of a lined baking sheet.
  3. Place seasoned steak on other half of sheet. Bake for 10-15 mins, flip steak and stir zucchini, bake another 5-10 mins until steak is done to liking and zucchini is tender.
  4. Transfer steak to a board, tent with foil, and rest for 10 mins. Mix sour cream/yogurt, Dijon mustard, and fresh herbs for the sauce.
  5. Slice steak thinly against the grain. Assemble bowls with rice, zucchini, steak, and a dollop of creamy sauce.
